Beef Fry Potato Bombs

I have a daughter who loves potatoes. She loves them in any way shape and form. Kugel, roasted mashed I need to make every Shabbos or I guess off with my head. In our house I guess you call them shalom bayis foods. For me it’s roasted eggplant and techina and for her it’s all about the potatoes. I need to get really creative for her because I get bored easily and I need to keep changing things up. I kind of got the inspiration for this from the beef fry wrapped dates. I said if we can do this to dates why not a potato. I found perfect mini fingerling potatoes that just pop in your mouth and I thought these would be perfect to wrap beef fry around. I boiled them for about 7 minutes until there were just cooked through but not falling apart. I then dried them and coated them with a little oil salt pepper and garlic powder. I wrapped the beef fry around each potato. I found I needed 2 packages of Meal Mart beef fry for the one pound of fingerling potatoes. I wrapped the beef fry around them and baked 350 for about 25 min until fat was rendered and the beef fry was crispy and potatoes cooked through. I then added a brush or maple syrup just for that added salty sweet factor and then preceded to eat the entire tray. I hope you enjoy!

Ingredients

  • 1 lb mini fingerling potatoes (I got mine from Trader Joe’s)
  • 2 packages Meal Mart beef fry
  • 1 tbsp olive oil
  • Garlic powder
  • Salt
  • Pepper
  • 2 tbsp pure maple syrup

Directions

  • In a pot add potatoes and allow to come to a boil.
  • Cook for 5-7 minutes or until cooked through and not falling apart.
  • Drain and dry the potatoes.
  • Preheat oven to 350 degrees.
  • Add a tbsp of oil and sprinkle some garlic powder, salt and black pepper on the potatoes.
  • Wrap each potato with a piece of beef fry the larger beef fry pieces I was able to cut in half).
  • Place on a lined baking sheet with seam side down.
  • Bake 350 for about 25 min until the beef fry is crispy and fat had rendered.
  • Brush each one with maple syrup.
