Baked “Fried” Chicken

Is there anything better than a piece of yummy fried chicken fresh from the frialator? I wish that could be my go to dinner but sadly I’m not sure all the fried food agrees with the way I want to feed my family. Coming up with a yummy baked “fried” chicken was a mission of mine. I wanted a crispy outside and a juicy inside. I think this recipe checks off all those requirement. You can flip this in the middle of cooking but I’m lazy and I’m ok with just one side having that amazing crunch. This comes together super quick and I’ll even run an errand while it’s cooking so it really is way better than babysitting the chicken in a frying pan or even the frialator. The bread crumb combo of the Panko bread crumbs and matzah meal, I think add something to the chicken. Ingredients

  • 12 pieces of chicken (I used bottoms)
  • 2 eggs
  • 1 cup Panko bread crumbs
  • 1 cup matza meal
  • 1/ 2 tsp paprika
  • 1/ 2 tsp garlic powder
  • Pinch black pepper
  • ¼ tsp salt
  • Cooking spray
  • Oil for Drizzling

Directions

  • Preheat oven to 375 degrees.
  • Prepare a baking sheet with cooking spray and set aside.
  • In a bowl whisk 2 eggs.
  • In a separate bowl add the Panko matzha meal and spices salt and pepper.
  • Rinse chicken off (you can remove skin if you want).
  • Dip in egg mixture coating well.
  • Dredge in the Panko make sure it’s well coated.
  • Place on greased baking sheet.
  • Repeat until all chicken is coated.
  • Spray chicken with spray to seal the breading to the chicken.
  • Drizzle oil on the chicken making sure each piece gets a little oil I like to you a plastic condiment bottle to do this so I don’t get too much oil on the chicken and it’s not too greasy.
  • Bake 375 degrees for about an hour until golden and the internal temperature is 180 degrees.
