One of the easiest and best tasting dried salami

One of my Sister in-laws made a Kiddush for her daughter the other week. She had the most amazing food that was catered by Main Event-Mauzone Caterers, one of the items she had that was devoured, was dried salami. If you have never had dried salami then what are you waiting for? The texture that the air-drying causes is incredible. Don’t get me wrong, I love a good Meal Mart salami but if you dry it then gets taken to the next level. I think most people are scared of drying salami’s but in my house growing up my dad dried them by the dozens in the kitchen. If I didn’t know any better I would have thought our kitchen was the local delicatessen. It really is super simple it’s just a matter of patience. I buy the large Meal Mart salami’s that usually come with a string attached and all I do is unwrap it, and hang in the kitchen. I have a window that I attach it to and it happens to be over the sink. Just wait a few weeks, the salami will lose some of its moisture and it will be firm to the touch. Yes, it’s that simple so go get your Meal Mart salami and in just about 2 weeks you can be enjoying this delicacy.

  • 1 2lb Meal Mart salami with string attached
  • Somewhere to hang it from

Directions

  • Unwrap the salami hang by the string attached
  • Wait 2 weeks until firm and the outside looks shriveled
  • Slice thin and enjoy with grainy mustard
