The following is a StoveTop London Broil with Peppers and Onions. The original recipe is ketchup and teriyake sauce but in keeping with Gourmet Goddess tradition of not using bottled sauces I created my own! It was delicious, easy, and involved minimal work!

Ingredients:
– 2lb London Broil roast
– 2 large yellow onions, sliced
– 1 large red bell pepper, sliced
– 1 large green bell pepper, sliced
– 1/2 cup Ketchup OR Tomato Sauce
– 3 tablespoons white vinegar
– 3 tablespoons honey
– 3 tablespoons LITE soy sauce
– 2 cloves garlic, crushed
– salt and black pepper, to taste
– Oil for searing the roast
?Step 1: Mix the ketchup, vinegar, honey, soy sauce and a dash of black pepper in a bowl and set aside.
?Step 2: Season the London Broil lightly with Salt and Black Pepper on both sides and sear in a hot pan. Set aside on a paper towel lined dish when done.
?Step 3: Add the sliced onions to the same pan used for searing the roast. When they’re translucent add the crushed garlic and mix well for 1 minute. (Not longer or the garlic will burn and turn bitter!)
?Step 4: Place the seared London Broil on top of the onions and pour the reserved marinade over the top.
?Step 5: Cover the pot, raise heat to high and bring to a boil. Once the roast is boiling, reduce heat to simmer (low) and allow the roast to braise for 1 hour covered.
?Step 6: After an hour of braising, add the sliced peppers to the pot and mix into the pan juices. Cover, bring to a boil again then reduce to simmer (covered) about 1 more hour or until the London Broil is tender and can be pulled apart with a fork.
*Serve as pulled beef or sliced into a roast, over rice, couscous, mashed potatoes or as is!
