It’s simple because the wine does the work for you!

3-4 LB French Roast
1 teaspoon of black pepper
2 large onions, peeled and chopped
16 oz (two packs) of whole white mushrooms
1 Cup of Vitkin Petite Sirah Red Wine
Celery chopped, 2 stalks
3 radishes, sliced
(check with LOR as some don’t use certain vegetables on Pesach, like radishes)

In a large baking place onions in the pan. Once onions are translucent, add whole mushrooms for 2 minutes, then remove from pan.
Sprinkle the roast with salt, pepper, and if you want, you could also add some paprika.
Bring the pan to high heat, add 2 tablespoons of oil. When the pan is hot, put in roast to sear on both sides for 2-3 minutes to form a nice crust, then place roast in baking dish.
Cover and put in the oven at 350 for 2.5 hours.
