I dream of coffee accompanied by that delicious bite of a healthy version of pastry. I am not a breakfast kind of girl so whatever I have with my coffee has to give me the energy to wrangle my two kiddies. Passover presents a challenge in this, generally most Passover pastries are loaded with sugar or some other unhealthy ingredient so I try to avoid it. With this challenge this year especially I decided to take the world famous Banana Breakfast Bar recipe that I posted on Instagram (and became an instant hit) and turn it into a Kosher for Passover treat. Top this with some ice cream and call it dessert if you please 🙂

Banana Breakfast Bars

Ingredients
  1. 2 large ripe bananas
  2. 1 egg
  3. 1/4 cup brown sugar
  4. 1/4 cup oil
  5. 1 tsp vanilla extract
  6. 1/2 tsp salt
  7. 1/2 tsp baking soda
  8. 1 cup almond flour
  9. 1/2 cup chocolate chips (I use dark)
Instructions
  1. Preheat oven to 350°F. Spray an 8x8” or 9x9” pan with nonstick cooking spray. (Line it with foil first for easy removal, if desired.)
  2. Place bananas in a large bowl. Mash them with a fork or potato masher until just small chunks remain. Stir in oil and brown sugar with a wooden spoon or silicone spatula. Add egg, vanilla, and salt, and stir until combined. Stir in baking soda. Add almond flour and stir until mixed, some lumps will remain. Fold in chocolate chips. Spread in prepared pan.
  3. Bake for 18-22 minutes until browned around the edges and not jiggly in the center. Cool completely. Slice into bars
