Pomegranate Chicken by Jacqueline Elbaz|@stuffffed

 

 A beautiful and easy chicken dish to put together for Chag!

Ingredients:

6-8 chicken pieces (I used legs and thighs to make everyone happy:) Skin on!

5 Tbsps pomegranate molasses

1-2 lemons, washed and sliced

2 small red onions, sliced thin

3 cloves crushed garlic

1 Tbsp of Evoo or avocado oil

Pinch of salt and pepper

1 Tsp lemon pepper

2 tsp dried mint

2 tsp dried parsley

1 tsp coriander

2-3 tsps pomegranate seeds

Directions:

Preheat oven to 350

In a bowl mix together chicken, pomegranate, molasses, lemons, onions, garlic, lemon pepper, salt & pepper, and oil. After coating chicken, put in ziploc and refrigerate for no less than 2 hours. On a line metal sheet pan tray put the chicken in for 45-50 minutes. Add the mint, parsley, coriander plus pomegranate seeds. Bake for another 20-25 minutes. Serve and enjoy!
