Colorful Siman salad that’s healthy and delicious! Perfect for Rosh Hashana!
Ingredients:
4-6 medium
Beets cooked and cubed
2 oranges zested peeled and segmented
1 red pepper cubed
1 yellow pepper cubed
One box colorful cherry tomatoes halved
Bunch cilantro chopped
1/4 cup brown rice vinegar
2 cups cooked tri color quinoa
1/4 tsp black pepper
1/2 -1 tsp salt
4 tbsp toasted nuts chopped or slivered (I used toasted walnuts)
3 tbsp honey or stevia ( you can use date syrup for a siman)
Directions:
Mix before serving
