Best Babka Recipe!

 
I use my my challah dough for my babka recipe as it’s a sweet challah and works well!

Challah dough
  1. 2 cups warm water
  2. 2 tbsp yeast
  3. 2 tbsp sugar
  4. Combine and wait until bubbly
  5. Then add
  6. 1 cup sugar
  7. 6 cups high gluten flour to start (you will need more)
  8. 1 cup oil
  9. 3 eggs
  10. A pinch of Kosher salt
Filing
  1. 1.5 cup sugar
  2. 1 cup confectioners sugar
  3. 1 cup cocoa
  4. 1/2 cup brown sugar
  5. 3 tbsp vanilla sugar
  6. 1 package Chocolate pudding
Crumb Topping
  1. 1 cup sugar
  2. 2 tbsp vanilla sugar
  3. 1 cup flour
  4. About 1/2 cup oil
Dough
  1. Mix all together add flour until dough isn’t sticky and pulls from the sides of the bowl (maybe 1-2 cups more depends on humidity etc).
  2. Kneed for 5 minutes more.
  3. Allow to rest for an hour covered.
  4. Shape.
  5. Rest for another hour.
Filling
  1. Mix together. Keep in the freezer and when needed add a little water and a little oil to form a paste.
  2. To shape babka roll out into a rectangle super thin
  3. Spread the chocolate filling on the entire surface of the dough
  4. Roll up lengthwise jelly roll style.
  5. Cut that in half and twist and then twist the 2 parts together again.
  6. Egg wash the babka then add the crumb topping.
  7. Allow to rise about 20-30 minutes.
  8. Bake on 350 degrees for 30 minutes.
