I use my my challah dough for my babka recipe as it’s a sweet challah and works well!

Best Babka Recipe

Challah dough
- 2 cups warm water
- 2 tbsp yeast
- 2 tbsp sugar
- Combine and wait until bubbly
- Then add
- 1 cup sugar
- 6 cups high gluten flour to start (you will need more)
- 1 cup oil
- 3 eggs
- A pinch of Kosher salt
Filing
- 1.5 cup sugar
- 1 cup confectioners sugar
- 1 cup cocoa
- 1/2 cup brown sugar
- 3 tbsp vanilla sugar
- 1 package Chocolate pudding
Crumb Topping
- 1 cup sugar
- 2 tbsp vanilla sugar
- 1 cup flour
- About 1/2 cup oil
Dough
- Mix all together add flour until dough isn’t sticky and pulls from the sides of the bowl (maybe 1-2 cups more depends on humidity etc).
- Kneed for 5 minutes more.
- Allow to rest for an hour covered.
- Shape.
- Rest for another hour.
Filling
- Mix together. Keep in the freezer and when needed add a little water and a little oil to form a paste.
- To shape babka roll out into a rectangle super thin
- Spread the chocolate filling on the entire surface of the dough
- Roll up lengthwise jelly roll style.
- Cut that in half and twist and then twist the 2 parts together again.
- Egg wash the babka then add the crumb topping.
- Allow to rise about 20-30 minutes.
- Bake on 350 degrees for 30 minutes.
