Sweet Potato Nachos

Healthy eating has been a big trend lately. More and more we try and feed our families better for you types of food. I too try and do the same. I started cooking with a more natural approach to food, and it turns out you can get really creative doing so. Nachos are a big item when we watch football in my house, and with football games every Sunday and piles of kids coming over I came up with better for you snacking options. Sweet potato nachos are a go too treat for watching those games and with pre-sliced pastrami from Meal Mart they come together in a pinch.

Ingredients

  • 1 package pre-sliced pastrami from Meal Mart
  • 1 large onion chopped
  • Olive oil
  • 2-3 sweet potatoes sliced in rounds
  • Salt and pepper to taste

Directions

  • On a cookie sheet sprayed with cooking spray lay out the sweet potato rounds in a single layer.
  • Drizzle with olive oil salt and pepper to coat (you can also use cooking spray if trying to avoid fat).
  • Preheat oven to 425 degrees.
  • While the oven is preheating put your sweet potatoes in the oven.
  • Bake for about 15-20 minutes flipping them over in the middle of cooking time (you might need a little more time depending on your oven) just don’t burn them but you want a nice caramelization on those sweet potatoes.
  • In the meantime add about 1- 2 tbsp oil to a frying pan, and sauté your onions till they are nice and caramelized, have patience with these the better you caramelize them the better they will be.
  • Chop your pastrami and add to onions and sauté a bit to bring out the pastrami flavor into the onions, add black pepper if needed (you shouldn’t need salt).

Serve on a big platter lay out the cooked sweet potatoes, add your onion and pastrami mixture on top you can do this layered until you use up all your ingredients.
