Blueberry Bourbon Cheese Cups by Charnie Kohn|@the.seasoned.palate

 

As someone who does not enjoy baking, I am always experimenting with no bake desserts. My specialties are dessert cups. I developed this recipe last year and it quickly became a crowd favorite. In under twenty minutes you can have a delectable Shavuos dessert sitting in your freezer!

Blueberry Bourbon Cheese Cups

Crushed cookies:

For the blueberry mixture:

16 oz fresh or frozen blueberries

1/4 cup sugar

3 tablespoons bourbon

1 tablespoon lemon juice

For the cheese mixture: 

16 oz whipped cream cheese

1/2 cup plain yogurt

1/4 cup sugar

1/2 cup confectioners sugar

1/2 teaspoon vanilla extract

In a small pot, combine all the ingredients for the blueberry mixture and simmer over medium heat for fifteen minutes. Remove from heat and allow for it to cool off. 

In a medium-size bowl, combine all the ingredients for the cheese mixture and whip together using a hand mixer. Whip until fully combined.

To assemble, add a crushed cookie to the bottom of a 3 oz cup. Fill three-quarters of the cup with cheese mixture. Add some of the blueberry mixtures and swirl with a toothpick to get the beautiful marbleization. Freeze for thirty minutes. Serve chilled.

Note: this recipe freezes very well. It is even better semi-frozen. After swirling, place all the cups in a disposable pan, cover, and freeze. to defrost, thaw on the counter for thirty to sixty minutes
