Spinach Nectarine Feta Salad by Tanya Ohana|@garlic.and.ganache

 

Beautiful and easy salad to whip up, perfect starter for Shavuos!

Ingredients: 4 cups fresh baby spinach
2 nectarine, thinly sliced
1/2 red onion, chopped
1/4 cup crumbled feta
1/4 cashews, roughly chopped
1 tsp wholegrain mustard
1 1/2 tsp honey
3 tbsp extra virgin olive oil
salt & pepper, to taste
 
Directions:
Toss spinach, nectarine, red onion, feta & cashews. 
In a small bowl, mix dressing ingredients – mustard, honey, olive oil, salt & pepper. 
Pour and toss dressing over salad just before serving.
