I am super excited about this recipe! It has Kislev written all over it! These Mini Jalepeno Corn Dog Bites will be just the treat you are looking for. They are so easy to make. Serve them with any mustard or sauce you like. These can be served in a big serving dish or would be cute in individual mini paper boxes. Either way they will be a hit! Great for any Chanukah entertaining!!

Mini Jalepeno Corn Dog Bites

Ingredients
  1. 1 cup corn meal
  2. 1 cup flour
  3. 1 tablespoon baking powder
  4. 1/2 teaspoon salt
  5. 1 tablespoon sugar
  6. 1-2 fresh Jalepenos, finely chopped
  7. 1 egg
  8. 1 tablespoon vinegar
  9. 1 cup water, (or a little less for a thicker batter)
  10. 1 package of hot dogs (8-10 hot dogs), cut in 1 inch pieces
  11. 2-3 cups oil for frying
  12. Extra flour to coat the hot dogs
Instructions
  1. 1. Combine all dry ingredients in a bowl and mix well.
  2. 2. Add the Jalepenos, egg, vinegar and water and mix well.
  3. 3. Begin to heat your oil to a high heat.
  4. 4. Coat hot dog pieces in flour, followed by the batter.
  5. 5. Using a wooden skewer grab the hot dog pieces and gently place them in the oil.
  6. 6. Fry for approximately 2-3 minutes or until the outsides are nice and golden.
