Classic Potato Latkes by Devorah K & Rachel M | @onepotonepan

Making Latkes is not as difficult as it looks! The only really hard part is the grating, if you dont own a food processor. So have fun making this Channukah favorite with your family and friends. Make sure you take turns grating so everyone gets a workout!

Ingredients:

5 potatoes

1 small onion

2 eggs

1 ½ tsp salt

Pepper to taste

2 tbsp flour

Oil for frying

Directions:

Grate potatoes into a bowl. Place potatoes in a clean hand towel and squeeze out excess water. Grate onion and add to potatoes. Add remaining ingredients and combine well.

Heat pan over medium-high heat and pour in oil. Spoon potato mixture into pan. Fry on one side for about 3-4 minutes, until golden brown. Flip to the other side and fry an additional 3-4 minutes. Remove from pan and drain on paper towels.

You can top with applesauce, sour cream, or get creative with a variety of sauces! You can also swap the regular potato with sweet potato, zucchini, or carrot instead for a new take on an old classic!
