Whole Wheat Oatmeal Chocolate Chip Bars

I have a huge addiction to hot cookies. I just love when they come out of the oven burning hot especially ones with ooey gooey chocolate chips. My diet says no but my brain just tells it to shut up and have it and just live a little. So knowing this I’ve been living a lot.  I really try and eat healthy and cook clean I just can’t get the need for cookies out of my head. I needed to come up with something that’s not as dangerous as a regular yummy chocolate chip cookie made with all the sugar and all the white flour so it was a mission of mine. I did ones with coconut flour they were ok, I did one with almond flour, banana flour you name the flour I think I tried it but if I was ok with it my kids would be miserable and just say eww I’m not eating that. I needed a happy compromise. Well here is was whole wheat, which when I made the cookies with just whole wheat and no oats I got the same eww reaction from my kids again I was happy they weren’t, so I thought let’s add oats and boom no more ewww. Now I get fighting over them and usually none are left on the tray by the time I turn around. I also made a cinnamon raisin version and my son who despises raisins can’t get enough enjoy them and let me know how they come out!

Ingredients

  • 1 Egg
  • 1/4 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 1/2 Cup Oil
  • 1 tsp Vanilla
    (You can add ½ tsp cinnamon to make the oatmeal raisin version if you want)
  • Mix together
  • 3/4 cup White whole wheat flour
  • 1.5 cups Oats
  • 1 tsp Baking powder
  • ½ cup Chocolate chips (or raisins I like golden ones)

Directions

  • Preheat oven to 350 degrees.
  • Mix the egg, sugar, brown sugar, oil, and vanilla
  • Add in flour and baking powder and mix till uniform.
  • Add either raisins or chocolate chips and mix again shape them into 2 logs.
  • Bake on 350 degrees for 12-15 minutes  (if you like them well done leave them in a little longer they will get crunchier, my kids like them a little softer)
  • Then cut into sticks and let harden a bit before you eat them, they might be a little crumbly at first but they do firm up !
