Taco Tuesday

Kosher Guru here, back again for another amazing dish. It’s actually one of my favorites and my kids love having them on Tuesdays. Well if you haven’t guessed already its taco Tuesday, and I’d like to share my meat with you, meat sauce that is.

It’s already cooking on the stove and the aromas in the Kosher Guru home are fantastic. I wish you could just smell them from the screen. I start by degreasing my chopped meat in a large pot with water. It doesn’t matter how much water because as soon as it’s cooked through I strain it and rinse it. I know I might be getting rid of some flavor but its way healthier and by the way I eat out a lot, so I have to cut some calories somewhere. Once drained I add my meat back into the big pot I started in (I don’t want to make too much of a mess or I’ll never be allowed back in the kitchen). I add to that a can of crushed tomatoes, a whole head, yes you heard me an entire head of garlic and lots of spices. I also like to add to my sauce carrots and potatoes. I peel, chop, and steam my potato and carrots in some water, and when fork tender I add it to my meat sauce. I then like to cook my sauce for about 10 minutes on high and let it all come together so it’s nice and bubbly, then I lower my flame to low and cook it down for about t an hour. I love hard taco shells, don’t know about you? The crunch together with my meat sauce is oh so amazing. I get my taco shells ready by putting them in the oven on a cookie sheet for about 5 minutes on 350. Oh yum, I can’t wait to load up my taco and dig in. I usually chop up tomato, lettuce, make some rice and some slaw on the side and oh what a dinner it is. Next time I’m making tacos come on by to taste and smell the aromas of this amazing creation. Ingredients
  1. 2 lbs chopped meat
  2. 2 potatoes peeled and diced small
  3. 2 carrots peeled and diced small
  4. 1 can 28 oz crushed tomatoes
  5. Half can from the tomatoes of water
  6. 1 head garlic peeled and minced small
  7. 3 tsp cumin
  8. 1 tsp chili powder
  9. 1 tsp salt (you might need more)
  10. Pepper
  11. 1 box hard taco shells
Instructions
  1. Take your chopped meat and add to large pot and cover with water
  2. Cook on high till meat is cooked through about 5-10 minutes
  3. Strain and rinse meat in a strainer and add meat back to pot
  4. Add the can of tomato sauce and fill half that same can with water and add that too
  5. Add garlic and the rest of your spices
  6. In a separate small pot add chopped carrots and potatoes fill with water till covered and cook on high until fork tender about 10 minutes
  7. Strain potatoes and carrots and add to meat sauce
  8. Cook meat sauce on high with all ingredients for about 10 minutes till bubbly then lower flame and cook covered for an hour on low stirring occasionally to make sure it doesn’t stick
  9. When done taste the meat and adjust the salt as needed
  10. Place taco shells on a cookie sheet and bake in oven at 350 for 5 minutes to crisp up the shell
Notes
  1. Add taco meat to your taco shell then pile on chopped lettuce, chopped tomato, avocado, your favorite slaw or rice. Your toppings are endless!  Serve with my homemade salsa (see meatless Monday recipes)
