Chanukah and the living is oily. Well that’s what this week is about yummy, oily, greasy food that for some reason its ok to make this week.

SALAMI LATKES

This weeks plans in the kitchen are donuts, latkas, falafel, and I’m sure I’ll come up with more fried delicacies to try. Well one recipe I had to try and that I’m sharing with you is made from salami, it adds so much flavor to my latka its incredible, it also adds protein that now I think latkas can be considered a meal. Salami latkas are pretty easy especially if you were making latkas anyway, its just one more added step but the results are a game changer. All I did is make my latka batter exactly the same but this time I cut up some Meal Mart salami sautéed it in a pan for a minute to get those salami oils and flavors bursting, added it to my latka batter and fried up my latkas as usual. Let me tell you it’s worth a try.

Ingredients

  • Latka batter (use your own or recipe below).
  • Meal Mart bullet salami cut up small (I used about half of it and saved the rest for salami and eggs recipe to follow).

Directions

  • In a frying pan on medium heat sauté cut up salami for 1-2 minutes until the oils are released and the salami is just slightly browned.
  • Add sautéed salami to latka batter.
  • In a frying pan add oil so the pan in coated in a layer.
  • Heat up the oil before putting your batter in the pan.
  • On medium heat fry latkas as usual about 5 minutes on one side then flip and fry the other side for 5 minutes more until golden.
  • Eat with any toppings you like I love it with apple sauce the sweet and salty just gets me every time.

Latka Batter

Ingredients

  • 10 large russet potatoes peeled and placed in large bowl of cold water
  • 1 large onion peeled
  • 8 eggs
  • 1 cup oil
  • Salt and pepper

Directions

  • In a food processor shred potatoes and onions.
  • In a large bowl place the potato mixture and add eggs mixing so it’s all incorporated.
  • In a frying pan heat up oil until it sizzles.
  • Add hot oil to potatoes and mix fast.
  • Add salt and black pepper to taste.
