Honey Sweet Potato Chicken Kabobs

Yield; 8 to 10 portions

Ingredients

  • 2 sweet potatoes, peeled, and cubed
  • 1lb baby chicken, cubed
  • 1 white onion, cubed

Marinade

  • ¼ cup oil
  • ¼ cup honey
  • 1 tsp chili powder
  • 2 crushed garlic cubes
  • Salt and pepper, to taste

Layer the cubed sweet potatoes into a baking pan and

bake uncovered at 450˚F for about 20 minutes.

In a bowl combine the marinade ingredients,

and let the cubed chicken marinate into the mixture for about 2 hours.

Thread the chicken onto skewers placing the baked sweet potatoes and the cubed onions

in between chicken pieces. Grill until desired doneness, for about 15 minutes
